Kick-off with truffles: the world’s most sought-after mushrooms will be showcased live on 29 January

Even the Greeks and the Romans were enthusiastic about the mushrooms that grow in the earth. Who goes on the arduous search, is rewarded thus already for more than three thousand years by the incomparable aroma of the truffle. For the guests of the Sunday special in the CORD offers itself on 29 January starting from 16:00 o’clock the opportunity to try completely comfortably the most diverse Trüffel and to experience at live stations Tipps and cheats for the procurement and preparation. Chef Florian Peters, together with master chef and gastronomic director of the EUREF Campus Berlin, Thomas Kammeier, has delved deep into the topic and put together a creative menu to bring the special truffle variety to life.

The flying menu holds a best-of truffles ready – from the welcome snacks with mushroom flan with
Crostini, mushroom earth and dwarf parsley, and truffle brie with pumpernickel, plum and pecan brittle, to dessert – a white chocolate cream with Perigord truffle, pear, rosehip and roasted macadamia nut. The menu’s other six stations also amaze by combining different seasonal classics or contrasts: Veal tartare with Japanese mayonnaise, black winter truffle, organic egg yolk and tramezzini; Vacherin Mont-d’Or with truffle date cream, bianchetti truffle and Piedmont hazelnuts; creamy onsen egg with black winter truffle, Joselito Ibérico ham, creamed spinach and roasted crumbs, Oxtail Tortelloni with Perigord Truffle, Truffle Nage, Purslane and Truffle Dressing, Winter Cod with Raw Mushroom, White Truffle Velouté, Brussels Sprouts and Nut Butter and finally Braised Cheek of Irish Pastured Beef and Madeira Truffle Jus, Black Salsify and Borettane Onion.

The order of the delights is, of course, determined by the guests themselves during the stroll. The Sunday Special is accompanied by an exquisite selection of wines, attentive service and a kitchen team that is happy to share its knowledge of truffles with guests. The truffle special on January 29 – from 4:00 to 9:00 p.m. – costs 198 euros per person. On 26 February there is a second edition around the noble mushroom. The following monthly Sunday Specials dedicate themselves to further culinary benefit topics such as sea fruits, Beef, nut/mother’s day or Whitsun.
